Great dish for Chanukah. Serve with apple sauce or sour cream.

1. Peel and grate potatoes.
2. Squeeze dry and place in a bowl.
3. Add onion, eggs, matza meal, salt and pepper.
4. Mix well.
5. Heat the oil in a frying pan and drop the mixture into the pan in large or small spoonfuls.
6. Brown well on both sides and drain on paper towels.
Chef's Tips
Keep the grated potatoes in a bowl of ice-water to keep them from turning brown.
