Description

A traditional Eastern European recipe that has always been a breakfast tradition in our family. Increase the quantities to make a big batch to freeze.

Method

    1. Preheat the oven to 180 / gas 4. Line a baking tray with greasproof paper.
    2. Peel the potatoes and grate them using either a grater or in a food processor. Transfer into a muslin square and squeeze out all the excess water from the potato. Set aside.
    3. Grate the onion and place in a bowl. Combine with the flour, salt, pepper, baking powder & egg.
    4. Add the potatoes to the bowl and mix well.
    5. Heat half the oil in a large frying pan / cast iron skillet pan on a medium heat. Drop about a quarter of the mix into the pan and flatten out into a 3 inch wide potato cake shape with a fish slice. Cook for approx 4 minutes on each side until golden. (reduce the heat if browning too quickly) Transfer to the baking tray and place into the oven to keep warm while you make the other 3 Latke's in the same way, using the remaining oil to cook them in.
    6. When all ready serve with applesauce or with smoked salmon & sour cream with dill stirred through it.
