Ingredients
- 100g crushed chocolate oreo cookies
- 50g melted butter
- 250g caster sugar
- 50g cocoa powder
- 1 tsp vanilla extract
- 1 tbsp Tia Maria (or equivalent coffee liquer)
- 50g butter
- 150g plain chocolate - chopped
- 4 egg yolks
- 600ml (1 large pot) double cream
- 2 tbsp cornflour
- 250ml double cream
- 2 tbsp icing sugar
- 2 tsp strong coffee powder
- ยฝ tsp vanilla extract
- Chocolate-covered espresso beans (optional to decorate)

The "I Love You" dessert! Chocolate oreo base with a mouse filling served with coffee flavoured whipped cream

Pre-heat oven to 180C
For crust:
Put oreo cookies in a bag and make into crumbs with a roller. Pour into a bowl and stir in melted butter. Press biscuit mixture into a pie dish. Bake for 10 mins then take out and leave aside to cool
For filling:
1. Pour cream, sugar, cocoa, and cornflour into a saucepan. Whisk in beaten egg yolks and let simmer for 10 minutes stirring to make sure the mixture doesn't stick.
2. Remove from heat and add chopped chocolate, vanilla and butter, and stir in until melted completely. Add Tia Maria and then leave to cool. Once cooled pour onto biscuit crust and chill in the fridge for about 4 hours until set.
To serve
1. Whip the cream together with vanilla and icing sugar until stiff. fold in coffee powder and spoon onto the plate next to the chocolate pudding. Decorate with grated chocolate or chocolate covered coffee beans
