- 120g butter
- 110g packed brown sugar
- 2 tbsp sugar
- 2/3 beaten egg

- 1 cup semi-sweet chocolate chips

Make the cupcakes:
1. Place the flour, sugar, eggs and margarine in a large bowl and beat with a wooden spoon for about 2-3 minutes until well mixed. (alternatively use an electric mixer and mix on medium speed) Kids love this bit, but be prepared for a messy table.
2. Put the bun cases on a baking tray and spoon a tablespoon of the mixture (about 35g) into each of the cases.
3. Bake for about 15-20 minutes at 180ยฐC
Meanwhile make the cookie dough:
4. Beat together the butter, sugars and vanilla.
5. Add the egg and beat until creamy. Gradually add the flour and salt, and once fully
6. blended and smooth, add the chocolate chips. Cover and chill in the refrigerator at least 15 minutes.
7. Divide dough into 12 balls and press with your palms into discs resembling chocolate chip cookies. Press on top of the cooled cupcakes.
Really easy and very yummy. After topping with the cookie dough I popped them back in the oven for 10 minutes and the dough went a bit gooey and the chocolate chip melted just a touch. Were a hit with the kids!
