Almond Cakes

Lovely light bites to enjoy at any time.


Beat the egg white in a clean grease free bowl until it forms stiff peaks.

Gently fold in the dry ingredients and the almond essence.

Using a dessert spoon, put into small "heaps" on the rice paper.

Bake for 15mins reg 2 or 3



Ground Almonds 3 ozs
Almond Essence a few drops
Egg- White Only 1
Caster Sugar 4ozs
Edible Rice Paper 1 sheet

Hints 'n' Tips

When cool cut around the bases of the cakes with a pair of scissors to sepparate them. Leave the paper on the bases of the cakes, it is totally edible.
You might have to direct your guests to eat the rice paper with the cakes .. it melts in the mouth, as do the cakes!
