Description

A very easy to make update on the classic Black Forest Gateaux - easy on the eye, delightful on the tongue and guaranteed satisfaction by one and all!

Method

  1. 1

    ***THE CHOCOLATE CAKE SPONGY BIT***

    1. Preheat Oven to 190 centigrade (fan 170 / Gas Mark 5) Grease 8 holes of a 12-hole muffin tin.

    2. Beat together the butter and sugar till light and fluffy (Electric Whisk will make this much quicker) Beat in the Eggs one at a time till pale and moussy.

    3. Blend together the Cocoa powder with 2 x Tbsp's of boiling water to a smooth paste, then add this and the vanilla into the egg mixture. Stir in gently.

    4. Sift the flour into the mixture, then fold through being careful not to knock too much air out of the mixture.

    5. Divide the mixture equally between the 8 greased holes of the muffin tin and bake for 12-15 mins on the middle shelf of the oven until lightly coloured and quite firm to the touch. When fully cooked, remove from the oven and allow the cakes to cool for 5-10 minutes before removing from the tin and placing on a wire rack to cool completely.


    ***SWEETLY GORGEOUS FILLING***

    6. Once the cakes are cool, cut in half horizontally.

    7. Whip cream with the icing sugar and vanilla until quite stiff.

    8. If using Kirsch (optional) sprinkle a little on to the bottom half of each cake to soak in.

    9. Spoon some of the cherry juice from the carton of pie filling on to the bottom half of the cake and top with a few cherries from the carton too.

    10. Over the cherries spoon the whipped cream and replace the top half of the cake.

    ***TOPPING IT OFF JUST NICELY!***

    11. Chop both the milk chocolate and the dark chocolate into small chunks and place in a heat proof dish. Boil the cream in a saucepan then pour it over the chopped chocolate. Stir until all the chocolate has blended nicely with the cream. Refrigerate for 30 mins.

    12. When chocolate mixture is cold and firm spread or pipe the mixture on top of the cakes and top with a cherry from the carton then refrigerate.

    13. Before enjoying these cakes at their best, remove from refrigerator 10-15 mins before eating.

    DONE!! ENJOY!!

Chef's Tips

*TIP* - The booze is definitely not essential, I prefer it without but I know some people prefer it with - so each to their own.
*TIP* - You could always make your own cherry pie filling but I've found that Sainsbury's now stock a CHERRY FRUIT FILLING RED (500g) carton which is a thousand times better than the mushy random red gunk that you could only get in cans. I'm sure other supermarkets do too but I can only vouch for the Sainsbury's one - it can be found around the pre-baked flan bottoms, meringue nests and other labour saving baking time savers! At just over a quid it's well worth it!
*TIP* - Don't worry about surplus ingredients - as soon as you've eaten one of these you'll be making them again before the surplus has time to go off!!
*TIP* WARNING! WARNING! - Once you've made these once BEWARE how moreish these can get - My husband hasn't stopped pestering me to make more of these since I first made a batch!
*TIP* If at all possible, charge money for these (even to family...actually, ESPECIALLY to family)They may not make a bomb to start with but in no time you'll be raking it in and soon start to find they're selling like... well, you get the idea!
