- 1 small head Brocolli
- 150g stilton
- 3 medium Potatoes
- 4 stalks Celery (diced)
- 1 medium Leeks. sliced
- 1 medium onion chopped
- pinch celery salt
- pinch sea salt
- pinch White Pepper
- 1 ltr Water

Cheesey soup with a hint of brocolli! Serve with warm crusty baguette & all your cares float away!!

- fry your onion in a little veggie oil or butter until soft in a deep pan
- add the leeks, celery, potatoes and seasoning and add the water & seasoning
- bring to the boil & then simmer veg until cooked and soft
- you can add the brocolli here & cook this too, or if you prefer the brocolli to be chunky leave out at this point
- blend the soup in your food processor / blender
- return to the pan & add the crumbled stilton (and brocolli if left out before), warm the soup through for 5 mins (or keep on a low heat for 20 mins if you added the brocolli here)
- serve immediately with warm crusty bread
Chef's Tips
once you have made the soup base, you could leave out the brocolli & stilton and add parsnips and a pinch of curry powder for a sweet warm alternative!

You can also freeze the base & when you fancy soup, add whatever cooked veg you fancy when you reheat it.
I thought this was rather watery and would have benefitted from Marigold vegetable stock powder in with the water. However, did not mean to score it only one star! Only the first one would light up!
