Description

A delicious snack or light supper. I actually like this best when the boys come round for a few beers or after a few down the boozer. Great for cold nights.

Method

    In a good non-stick pan, pop the cheese, butter, worcestershire sauce, flour, mustard and pepper. Very gently heat and melt until it's a thick sauce. Add the beer, being careful not to thin the 'rarebit' down so it's too runny. Keep stirring on a low heat for a few minutes. You want a glossy, thick consistency.

    Toast bread on one side under the grill and then spoon the mixture onto the untoasted side. Brown under the grill... on a lowish heat so you don't burn the toast.

Chef's Tips

Good strong cheese and a delicous brown beer makes this dish. Powerdered mustard, rather than ready made stuff, is best too.

I have done so at last! (See Mattie's Welsh rarebit). I had to wait for my mother to come to my house & we made her rarebit together, measured the ingredients, timed the cooking & photographed the finished product, before eating it!

It is probably very nice, but it doesn't bear any resemblance to the Welsh rarebit my first language Welsh mother taught me to make!
