Description

This is my take on the traditional Turkish cuisine. It is very filling and will feed 4 to 6 people. Serve with boiled rice.

Method

    1. You will need a large deep frying pan with a lid.

    2. Combine the lamb mince with the salt and mixed herbs (you can use just Basil if you wish, or fresh herbs).

    3. Put the oil in the pan and heat gently, then form the meat mixture into balls and flatten with the hands - the mixture should make 8.

    4. Place in the pan and brown gently on both sides then lower the heat and put the lid on. Leave for 5 minutes then turn the koftas over for a further 5 minutes. Be careful not to overcook the meat at this point.

    5. Push the koftas to one side of the pan and add the chopped onion and garlic, keep on a low heat and pop the lid back on.

    6. When the onions are softened add the chopped tomatoes and the tomato puree. Gently stir so as not to break up the koftas. Pop the lid back on and leave on a low light, stirring occasionally for 3/4 hour.

    Serve with boiled rice. Enjoy!
