Ingredients
- 1 cucumber, peeled and thinly sliced
- 2 tblsp wine vinegar
- pinch sugar
- 16 raw king prawns, peeled and deveined
- 2 tblsp olive oil
- 10 saffron threads
- pinch dried red chilli
- 1 tblsp coriander seeds
- coarse sea salt and pepper
- 4 coriander sprigs, chopped, to garnish

The day before you intend to serve, place the cucumber slices in a bowl and cover it with cold water. Stir in the wine vinegar, 1 teaspoon salt and the sugar. Set aside to marinate for 12 hours.
On the same day, place the prawns in a dish, drizzle with a little olive oil and sprinkle with saffron and crushed red chilli. Season with pepper.
The next day, drain the cucumber. Arrange the slices, overlapping slightly, in a circle on individual plates and sprinkle with coriander seeds.
Heat the remaining oil in a frying pan and cook the prawns over a high heat for 1-2 minutes on each side (Be careful: cook until they have just changed colour otherwise they will toughen). Season with salt. Spoon the prawns into the centres of the plates. Sprinkle with chopped coriander and serve!

Chef's Tips
If possible buy fresh rather than cooked prawns. If they are frozen, thaw them thoroughly before cooking. Don't overcook them or they will toughen, but there is no benefit in undercooking. Cook until they have just changed colour. If using cooked prawns, simply heat through briefly before serving.
