Description

Veracruz is a port on the Gulf of Mexico which lends its name to a variety of colorful seafood dishes

Method

    1) Heat the oil in a large frying pan and add the onion and green pepper. Cook until soft but not coloured.
    2) Add the chillies, taco sauce, tomatoes, olives, capers, cumin and some salt to taste. Bring to the boil and then lower the heat to simmer for 5 minutes.
    3)Remove black veins, if present, from the rounded side of the prawns with a cocktail stick.
    4) Add the prawns to the sauce and cook for about 5 minutes or until they curl up and turn pink and opaque. Add the lime juice to taste and serve.

Chef's Tips

The sauce may be prepared in advance and reheated while cooking the prawns.
If using cooked pranws, reheat for about 5 minutes. Do not overcook.
