Ingredients
- 450g (12oz) Raw shelled king prawns, ground
- 115g (3oz) can bamboo shoots, chopped
- 4 TBSPS Water
- 1Β½ TBSPS Soy sauce
- Β½ TBSP Chinese rice wine or dry sherry
- Β½ Teaspoon Sugar
- Β½ Teaspoon Sesame oil
- Dash of pepper
- 1Β½ TBSPS Cornflour (cornstarch)
- Dough
- 450g (12oz/2Β½ cups) Plain (all purpose) flour
- 115ml (4fl oz/Β½ cup) Boiling water
- 70 ml (2Β½ fl oz/ 1/3 cup) Cold water
- 1 TBSP Vegetable oil

Method

To make filling, mix together all ingredients except cornflour until the mixture is well blended and smooth.

Stir in cornflour.

Divide into 30 portions.

To make dough, put 315g (10 oz/2cups) of the flour in a medium size bowl.

Reserve remaining flour and use for hands if they become sticky.

Stir in the boiling water.

Add the cold water and oil.

Mix to form dough, knead until smooth.

Roll the dough into a long, rope shape and cut into 30 pieces.

Use a rolling pin to roll each portion into a thin 5 cm (2in) circle.

Place 1 portion of the filling in the middle of a dough circle.

Bring the opposite edges together and pinch them together to hold.

Repeat with remaining circles and filling.

Line a steamer with a damp cloth.

Set the Har Gau about 2.5cm (1in) apart.

Steam over high heat 5 minutes.
