- 1 large Red Onion
- 2 cans Cannelini beans
- large can tuna. good quality chunks
- 2 Tbsps olive oil. virgin
- 3 Tbsps white wine vinegar
- 2 Tbsps Parsley. Chopped

Description
Makes an excellent starter, especially to an Italian themed meal, or a great lunchtime meal.
Method

1. Peel the onions, cut in half and slice into fine half rings.
2. Drain and rinse the beans, leave to dry off for a few minutes.
3. Drain the tuna chunks and break up slightly into even flakes.
4. Mix the tuna, onion and beans together gently.
5. Mix together the olive oil, vinegar and parsley and add to the tuna, beans and onion.
5. Turn the dressing gently through the ingredients to mix. Leave to marinate for 15 minutes.
6. Serve the tuna salad on a bed of crisp lettuce, (with crusty bread if having as a lunch).
