Good healthy Spring dish, goes well with Spring lamb


1. Heat the oil in a large frying pan over medium heat, add the mushrooms and onions and sauté for 5 minutes.

2. Add the spring greens and cook, stirring, for 1 minute.

3. Add the stock, and cover and cook for about 5 minutes until the greens are wilted.

4. Good sprinkled with goat cheese
