Ingredients
- 1 TBSP Vegetable oil
- 1 Onion, diced
- 1 Red capsicum (pepper), diced
- 2 Cloves garlicm crushed
- 1 Teaspoon Finely chopped fresh ginger
- 1 Litre (1ΒΎ pt) Chicken stock
- 115g (4oz) Boneless chicken thigh or breast, fillets, sliced
- 20 Uncooked small prawns, shelled and deveined
- 115g (4oz) Rice noodles
- 115g (4oz) Canned bamboo shoots, drained and sliced
- 5 Button mushrooms, thinly sliced
- ΒΌ Lettuce, shredded
- 2 Spring onions, thinly sliced
- 2 TBSPS Finely chopped fresh coriander
- 1Β½ TBSPS Soy sauce
- Freshly ground pepper

1) Heat the oil in a saucepan over a medium heat, add onion and red capsicum (pepper) and cook, stirring, for 5 minutes or until onion is soft. Add garlic and ginger and cook for 2 minutes longer.
2) Stir in stock and bring to the boil. Add chicken, prawns, noodles, bamboo shoots and mushrooms, reduce heat and simmer for 5 minutes or until noodles are tender.
3) Stir in lettuce, spring onions, coriander, soy sauce and black pepper to taste and serve immediatly.
