- 1Β½ kg (3 lb) Uncooked king prawns, peeled and deveined, tail-on
- Chilli marinade
- 2 Teaspoons Cracked black pepper
- 2 TBSPS Sweet chilli sauce
- 1 TBSP Soy sauce
- 1 Clove garlic, crushed
- ΒΌ cup (55mL/2 fl oz) Lemon juice
- Mango cream
- 1 Mango, peeled, stoned and roughly chopped
- 3 TBSPS Coconut milk

1) To make marinade, place black pepper, chilli sauce, soy sauce, garlic and lemon juice in a bowl and mix to combine. Add prawns, toss to coat, cover and set aside to marinate for 1 hour. Toss several times during marinating.
2) To make mango cream, place mango flesh and coconut milk in a food processor or blender and process until smooth.
3) Preheat barbecue to a medium heat. Drain prawns and cook on lightly oiled barbecue for 3-4 minutes or until prawns change colour. Serve immediatly with Mango cream.

Chef's Tips
Coconut milk: it can be purchased in a number of forms: canned, as long-life product in cartons, or as a powder to which you add water. Once opened, it has a short life and should be used within a day or so.
