Instead of the traditional Gazpacho made with tomatoes, I came across this version in Burgundy using melon, spelt the french way.

Really simple, but delicious appetizer.
Finely chop the shallots (no one likes big pieces of raw onion), and garlic.
Put half the water melon, 3/4 of the galia, the shallots and garlic, and a tbsp of extra virgin olive oil in a blender until smooth. (Play with this to suit the texture you want, more galia more chunky.
Season with salt and pepper to taste.
Serve into small dishes with a cube of crushed ice each, drizzle in some more oil for presentation.
Looks great and is very easy to make! Always a bonus when you've got 4 or 5 more courses to turn out.
