- Β½ Juice of a lemon

- 1tbsp white wine vinegar
- 3 tbsp olive oil
- pinch salt and pepper

Description
A spicy tomato soup garnished with Tabasco

Roughly chop the tomatoes and place in a blender.
Add the remaining ingredients and blitz until smooth and season to taste.
Chill soup in the fridge for a few hours.
Combine all of the garnish ingredients, except the Tabasco.
Serve a bowl of soup with a generous spoonful of garnish in the centre, a drizzle of olive oil and a dash of Tabasco, if using.
For the croutons:
Heat the olive oil in a large frying pan. Add the garlic
and cook for 1 minute to infuse the oil. Add the croutons and fry until toasted and golden.
Season with salt and serve with soup.
Chef's Tips
The longer you leave the soup to chill the more intense the flavour.
