Ingredients
- 500g (1lb) Raw peeled king prawns
- 1 Stalk lemongrass, roughly chopped
- 5 Spring onions, peeled
- 3 Cloves garlic, peeled
- 4 Fresh red chillies, halved and seeded
- 1 teaspoon Ground tumeric
- 3 TBSPS Chopped coriander
- 6 TBSPS Vegetable oil
- ยฝ teaspoon Shrimp paste
- 1 Can coconut milk
- 1 Can sliced pineapple
- Salt to taste

Method

1) Using a blender of food processor, grind the lemongrass with the spring onions, garlic, chillies, tumeric and coriander.
2) Heat the oil in a wok and add the ground paste. Cook for a minute then stir in shrimp paste with the thin part of the coconut milk. When mixture is bubbling stir in the prawns and the remaining coconut milk.
3) Allow to heat for a few minutes then stir in drained, sliced pineapple pieces and continue to simmer for about 10 minutes. Serve with steamed rice.
