Ingredients
- 25g Butter
- 200g Chicken breasts. boneless and skinless cut into cubes
- 1 onion chopped
- 3-4 cloves garlic chopped
- 1 pint chicken stock
- 125ml milk
- 125ml Cream
- 340g tin sweetcorn
- salt and pepper
- 2tbsp Parsley
- 1 spring onions finely chopped

1) Melt butter in saucepan, add chicken onion and garlic, cook for 10 mins untill slightly brown.
2) Put stock, milk, cream and sweetcorn in a blender and blitz until rough puree.
Pour over chicken and bring to the boil, reduce to simmer forn 5 mins.
3) Stir in parsley and spring onion and optional lemon juice to taste.
