VicΒ΄s Healthy Fruit Loaf
Ingredients
- 6 oz self raising flour, sifted
- 4 oz caster sugar
- 2 oz soft, light brown sugar
- Β½ tsp Cinnamon
- 2 medium eggs, beaten
- 1 medium banana, mashed
- 4 oz unsalted butter, melted
- ΒΌ tsp bicarbonate of soda
- 2 heaped tbsp Linwoods milled seed & berry mix
- 2 oz dried raisins (or other fruit)
- 1 bag herbal tea of your choice

Description
This is a great Healthy fruit loaf using Linwoods Superfood seed & berry's, Fresh banana and dried raisins infused with herbal tea.
Method

1) Pre-heat the oven to gas 3, 150-160 degrees, grease and line an average sized loaf tin.
2) Infuse the dried fruits with your herbal tea bag in just enough hot water to cover and set aside to cool. (I used Twinings Blueberry & Apple)
3) Sift all the dry ingredients (flour, sugar cinnamon, bicarbonate of soda and the milled seeds) into a large bowl and set aside.
4) Melt the butter, mash the bananas, drain the fruit and mix the eggs, once done add all the wet ingredients into the dry-mix bowl.
5) Gently fold them together until just combined, don't over mix as you don't want the cake to become heavy. Add the batter to the loaf tin and bake in the centre of the oven for 45-55 minutes.
6) Once the loaf is well risen, golden brown and cooked through (this may take longer depending on your oven) leave to rest for 10 minutes then remove from the tin and serve warm.
Leave to cool completely and it will keep for a few days if stored in an airtight container.
Chef's Tips
The 'Linwoods' milled seed and berry dry mix I have used in this recipe is a great healthy boost to your daily requirements. The bag includes Flax, Sunflower, Pumpkin & Sesame seeds & Goji Berries. You could also use any of the other 8 'Super Foods' they sell, including the flaxseed, cocoa and berries mix.
