- 4 Pieces of fish (smoked or unsmoked)
- 8-10 Tatties. peeled and chopped
- 4 pints Full cream milk
- 1 onion
- small tub Single cream
- bunch Parsley
- tablespoon Flour

Gently fry the onion in butter until soft. Add the tatties and gently cook for a few minutes, then stir in the flour.
Add the milk and bring just to boiling point. Simmer until the tatties are soft then add the fish which you have already cut into chunks. Cook for further 5 minutes until fish ready.
Add the cream, parsley and season to taste. Mash up a wee bit with a tattie masher.
You now have a lovely creamy soup, like Cullen Skink, but without the brand name!!

Watch the milk doesn't boil over.....man it makes a real mess!
It tastes even better when it's a day old
Any fish will do for this, but it is especially nice with one or two big bits of smoked haddock...watch out for the half price stuff in supermarkets!
