Crunchy Sugar-topped Slices

Beautiful crunchy sweets


1. Set oven to moderate hot,Gas Mark 5/375F/190C.
2. In a saucepan,gently melt the butter or margarine.Allow to cool.
3. Whisk the eggs with the sugar until mixture is thick and leaves a trail,then mix in grated lemon rind.
4. Fold in the flour,alternating with the melted butter or margarine.
5. Spoon the mixture into the prepared tin and level the surface.
6. For the topping,place thin slivers of butter evenly over the cake and sprinkle generously with the sugar for the topping.
7. Bake just above centre in the pre-heated oven for 20-25 minutes.Leave to cool in the tin before cutting into fingers.


For the cake:

Self Raising Flour.sifted 8 oz
Lemon Rind.grated ½
Caster Sugar 4 oz
Eggs 4
Butter Or Margarine 6 oz

For the sugar topping:

Butter 2 oz
Caster Sugar 4 oz
