Method

    1. Start the oven at Gas Mark 6/400F/200C.
    2. Once you have rolled out the pastry over a tart tin make sure to prick the base of each tart with a fork.
    3. Now you must bake for about 15 minutes until cooked.
    4. Remove from the oven and allow to cool.

    Making the filling:
    5. Cream the egg yolk with the sugar, cornflour and a little milk until you achieve a smooth texture.
    6. Heat the rest of the milk just below the simmering point
    7. Pour the milk on to the egg yolk mixture,stirring all the time to ensure a smooth consistency.
    8. Return the custard to the pan and bring to the boil, stirring all the time.
    9. Boil gently for 1-2 minutes.
    10. Remove from the heat and stir in the vanilla essence.
    11. Whisk the egg whites until stiff, then fold into the warm custard together with 1 tbsp of the coconut and leave to cool.
    12. Meanwhile toast the rest of the coconut until golden brown.Halve and seed the grapes.
    13. When both filling and pastry cases are cold, spoon the custard into the cases.
    14. Sprinkle over the toasted coconut and decorate with the grapes.
