Description
Roast the vegetables and pack into the French bread for easy picnic.

1. Set oven to Gas 5, 190°C, fan170°C.
2. Cut up and place the vegetables in a casserole dish. Drizzle the top with the oil and roast until tender.
3. Cut the baguette in half lengthways and tear out about half of the soft bread along the inside.
4. Layer the roasted vegetables inside the baguette and then press the two sides of the bread together to enclose the filling.
