- scoop vanilla icecream
- 1 oz castor sugar
- 1 egg white
- 1 tbls raspberry sauce or couli

Description
After trying to think of something quick and easy - I just used what was in the cupboard/freezer at the time.
Method

pre-heat a grill
whisk egg whites until stiff
whisk in all the sugar gradually to make a meringue
in an individual glass dish
raspberries in the base with the raspberry couli
ice cream on top
cover totally with the meringue
put under the hot grill until top crisp and golden brown - about 30secs - 1 min max watch with care
carefully remove from under the grill and serve immediately
