score the squid on one side. Heat olive oil in a dish that you can put in the oven. When v hot add the squid and a couple of pinches of oregano, some dried chill and the juice of a lemon. After a couple of minutes put in the oven for another 5 mins. While the squid's in the oven fry the chorizo (sliced) so that it starts to give up it's oil and becomes crisp. Take squid out of the oven, mix with the chorizo and then serve up over a bed of fresh spinach leaves
