I came down with a cold right after my birthday. Ugh! I guess that’s what I get for staying out late and partying all week!

    Cut up zucchini into half-inch rounds and toss with olive oil and thyme. Grill on both sides on medium heat until tender but still crispy. Cut up cherry tomatoes in half and the onion into thin half-moon slices. Peel the garlic, but leave the cloves whole. Put the tomatoes, onions, and garlic in the grill pan and saute for a minute or two on medium-low heat (stirring frequently). Add the tomatoes and onions to your zucchini plate, and chop up the grilled garlic before sprinkling on top. Garnish with fresh basil, red pepper flakes, artichokes, more olive oil, and salt & pepper.

Tip 1: Add avocado and/or grilled chicken or shrimp if you’ve got it! Tip 2: Make as much or as little as you like. This dish is great for a party, but is just as easy to make for one person.
