- 300g Butternut Squash Peeled and chopped
- 2 Garlic cloves chopped
- 150ml Vegtable Stock
- 4 tbsp milk
- 2 handfuls Fresh Coriander (Optional)

1. Heat the olive oil in a saucepan and cook the garlic for one minute.
2. Add the chopped butternut squash and fry for two minutes.
3. Add the vegetable stock to the pan and bring to the boil.
4. Simmer for 8-10 minutes, or until the butternut squash is tender.
5. Add the milk to the pan and season with salt and pepper.
6. Allow to cool for 5 mins.
7. In a food processor, blend the butternut squash mixture until smooth and pass through a sieve into a jug.
8. Serve and garnish with coriander
