Ingredients
- 4 inch piece Chorizo chopped
- 3-4 Chicken breast cubed
- 1 Packet King Prawns
- 1 Red Pepper De-seeded and Finely Chopped
- 1 Green pepper. chopped
- 2 Sticks Celery (diced)
- 1 Large Onion (Chopped)
- 4 Garlic cloves. crushed
- 3 Sprigs Fresh Thyme Leaves
- 1 tsp Chilli powder
- 1 tsp Smoked Paprika
- Β½ tsp Cayenne Pepper
- 1 tsp Salt
- 1 bottle Pasata
- 1 Pint Chicken Stock
- 250g Long Grain Rice
- 3 tbsp Olive Oil

1. Lightly fry chorizo in olive oil in a wide deep pan until browned.
2. Remove chorizo and brown chicken in the same pan.
3. Remove the chicken and fry the onion, peppers, celery and garlic until lightly browned and soft.
4. Add the smoked paprika, chilli powder, cayenne pepper and salt and fry for 1 minute.
5. Add the remaining ingredients, except prawns, and stir well. Bring to the boil, and then reduce to a simmer.
6. Simmer for 20-25 minutes, stirring frequently and adding water if it looks like drying out too much.
7. Add prawns in the last five minutes of cooking and stir in to just heat them through.
