1. Cook the rice in a medium saucepan of boiling water for 12 minutes, or until just tender. Drain and set aside.
2. Meanwhile, heat the oil in a large non-stick frying pan or wok, and add the chicken. Cook, stirring, for about 5 minutes, or until browned all over. Add the celery, onion, capsicum and garlic, and cook for a further 5 minutes, stirring frequently, until the vegetables are slightly softened.
3. Add the cajun seasoning, thyme and tomatoes, and season with salt and pepper. Cook gently, stirring occasionally for a further 5 minutes.
4. Drain the rice thoroughly, then add it to the frying pan. Stir well to mix everything together, taste for seasoning, then serve.

VARIATION:
- Cooked peeled prawns can be used instead of chicken. Add them just at the end of the cooking time so that they don't overcook.
