Ingredients
- 1 kilo pork ribs
- 1 onion roughly sliced
- 2 star anise, broken into pieces
- 2 tbsp. freshly grated ginger
- 1 tsp. freshly milled black pepper
- 1 tbsp. sea salt
- 4 tbsp. tomato ketchup
- 4 tbsp. soy sauce
- 4 tbsp. clear honey
- 1 tbsp. olive oil
- 2 tbsp. sugar

A summer recipe for when the BBQ is lit in the garden but can easily be done under the grill in the oven.

Place the ribs into a large saucepan and fill with water till they are just covered. Add the sliced onion, the broken star anise, ginger, salt and pepper and bring to the boil. Lower the heat and simmer for 30 minutes. Remove the ribs, discarding the rest of the pan and allow to cool.
For the sticky sauce, mix together the ketchup,soy sauce, honey, oil and sugar.
Cut the meat into single ribs if grilling in the oven, or leave in 2-3's if placing on the BBQ. Baste the ribs with the sauce and grill/BBQ for 2 minutes on each side. Baste again and grill/BBQ, until the sugar caramelizes and ribs turn sticky.
