Pour 300ml boiling water onto the tea bag and leave to infuse for 5 minutes. Discard the tea bag. put the mix fruits into the tea and leave for a few hours or overnight.
Pre-heat the oven to 180oC, butter the base of a 800g loaf tin. Stir the sugar and then the eggs into the fruit mixture. Sift in the flour, baking powder and cinnamon and stir until thoroughly combined.
Pour the mixture into the tin and bake 1 1/2 hours or until a skewer inserted into the middle comes out clean.
Cool in the tin for 10 minutes and transfer onto a cooling rack.
This is a waitrose recipe, but the best I have found for tea loaf. Enjoy!!
