Stir Fried Pasta, Peppers & Curry
Ingredients
- 1 tbspn olive oil
- 6 garlic cloves. finely chopped
- 1 tbspn fresh ginger root. peeled and finely chopped
- 1 medium onion. finely chopped
- 3 rashers Streaky bacon - chopped
- 1 red pepper deseeded &cut into ยฝ ' dice
- 1 yellow pepper,deseeded & cut into ยฝ' dice
- 300 ml stock-chicken or vegetable
- 1x400 grm tin chopped tomatoes
- 2-3 tbspns madras curry paste
- 2 tbs tomato puree
- 1 tspn salt
- ยฝ tspn fresh ground black pepper
- 2 tspn sugar
- 450 grm dried pasta eg fusilli,radiatorri,
- fresh basil leaves to garnish

This is a really easy, economical & tasty meal.
Method

1 Heat oil in a wok,or large frying pan,until hot & slightly
smoking.
2 Add garlic,ginger & onion then stir fry 1-2 mins.
3 Add bacon & continue to cook for 3-4 mins,until bacon is
brown.
4 Add peppers,tomatoes,tomato puree,curry paste,sugar &
stock.
5 Reduce heat,cover & simmer for 30 mins.
6 Cook pasta according to pack instructions,drain well
& add to the curry sauce.
7 Check seasoning & garnish with fresh basil
Chef's Tips
To make this dish even more economical try adding any
left over meat you may have,to the sauce.
