I love peppers, all kinds of them and my family adores everything that includes peppers. We all know how good they are for us so let's just jump to the recipe...

    Method:

    Chop the onion and saute in the vegetable oil for a couple of minutes. Add the sliced mushrooms and saute for further 3-4 minutes. Then add the mince and herbs and stir until the mince is crumbled and becomes brown. Now add the washed rice and half a cup of water. Stir again and leave for 3-4 minutes (until the water goes into the rice).
    Meanwhile, preheat the oven to 200 degrees and prepare the peppers. Cut the top and clean the seeds, keeping the top bit to close the peppers when stuffed.
    Now fill the peppers with the prepared filling and put the tops of the peppers back into place.
    Arrange the peppers in a casserole dish, poach them with a knife on a few places (will be cooked quicker this way), add a cup of water to the dish, close it with foil or a lid and bake for 45 minutes or until the peppers are soft.

    Until you wait for the stuffed peppers to bake, why not make a gorgeous sauce to go with them.
    In a pan melt the butter, then add the flour and stir for 30 seconds to fry, now remove from heat and add the milk. Stir and put back on the hob to thicken while stirring regularly. That's it and you have a great family dinner, I hope you like it!
