Place shallots and mint in a blender and whizz until finely chopped. Then add the lamb mince and whizz it together. Add the egg(s) and do a final whizz to combine the mixture really well (TIP: you will know the egg has combined with the lamb when the whole mix moves round the blender as one and doesnt look like it is mixing anymore.) Finally take a fair sized handful of the mince and shape into a pattie (burger shape. Grill on a medium heat (or if you have no heat setting drop the grill tray down) for around 20 minutes (but depends on thickness/shape of the burger. Serve with salad and in a bun or with mash and beans, however you like! Very versatile as once you make a homemade burger you can then go on to change the ingredient e.g. swap lamb mince for beef and swap mint for chillies and you've made something totally different. You can also make the mixture into meatballs instead which is another recipe in itself!!!
