The Baron de Ley winery was founded by a prestigious group of Rioja professionals in 1985. They were quite unique in their approach as they modelled the winery on a Medoc chateaux, which was a pioneering move at that time for producers in the Denominacion de Origen Calificada Rioja. This wine is aged in new oak casks for 20 months prior to resting in the bottle for 2 years before release. It has definite claret qualities; the nose is layered with ripe cherry, toasty oak and a touch of cigar box. Lively, ripe, red fruit with dried tobacco and nutty vanilla overtones, round tannins with an expressive woody finish. These herb-crusted lamb chops are a British classic with a modern twist, perfect for a family dinner or a special occasion. The vibrant minted pea purée adds a fresh and flavorful touch, bringing the dish to life.     Preheat the oven to 200°C (390°F).

    In a food processor, combine 1 cup of fresh peas, 1/4 cup of mint leaves, 2 tbsp of olive oil, 1 tbsp of lemon juice, and salt to taste. Blend until smooth and set aside.

    Season the lamb chops with salt and pepper. In a bowl, mix together 2 tbsp of Dijon mustard, 1/2 cup of breadcrumbs, 1/4 cup of chopped fresh herbs (such as parsley, thyme, and rosemary), and a drizzle of olive oil.

    Brush each lamb chop with the Dijon mustard, then press into the herb and breadcrumb mixture to coat evenly. Place the chops on a baking tray lined with parchment paper.

    Roast the lamb chops in the preheated oven for 20-25 minutes, or until they reach your desired level of doneness.

    While the lamb is cooking, bring a pot of salted water to a boil and blanch 1 cup of frozen peas for 2 minutes. Drain and add to the food processor with the mint mixture to blend until smooth.
