My husband was getting bored of his cheese sandwiches for work, and a friend of mine suggested this, she made it for hubby for years and years and he never got bored of them.

Grate cheese, red onion and carrot, don't overdo the onion and carrots, you want about 3 times as much cheese as onion and carrot. Mix with about one - two tablespoons of salad cream and season with pepper.
Gorgeous filling sandwich.
Can be made with white bread, normal onions, a variety of cheeses, but the above being my fave.
Cheese, bread and salad cream can all be substituted for low fat options.

I made this sandwich mix and I have to say it's right up my street! It's simple and it's got cheese in it. Perfect!
