Prawns and dill are a classic combination - these are proper sandwiches for proper picnics.

Mash the cream cheese with the parsley or dill, lemon zest and pepper and spread over 3 slices of the brown bread. Top with the prawns.
Butter the 3 slices of white bread on both sides and put on top. Sprinkle with mustard and cress. Butter the remaining slices of brown bread and place on top of the cress.
Remove crusts, then cut the sandwiches into triangles and pack in a sandwich box.
