Description

Quick, easy and very tasty chicken recipe. Flavours all marry up beautifully and this dish can be eaten with rice, chips or mash along with seasonal vegetables.

Method

    In an ovenproof dish add the following ingredients,

    *6 chicken legs or 8 thighs or 6 chicken breasts -(with a sharp knife make light incisions on the meat)
    *1 chopped onion
    *4 crushed garlic cloves, roughly chopped with the skin on.
    *1 inch of grated ginger
    *2 tbls of olive oil
    *2 tbls of dark soy sauce
    *2 tbls balasamic vinegar
    *4 tbls honey or maple syrup
    *2 dessert spoon of soft brown sugar
    *cut lime in half and squeeze juice of whole lime into the mixture and add the lime halves to mixture as well.
    *season well with salt and pepper

    Using your hands rub the marinade into all the chicken pieces.
    Once all the chicken has been covered with the mixture.
    Cover and leave for at least 30 minutes to marinade in the oven proof dish.

    Turn oven to 190 degrees (180 degrees if Fan Assisted)

    Place chicken in pre heated oven and cook covered for 45 minutes. Turn heat up to 200 and cook for further 20 minutes uncovered.

    The chicken is done when outside is nicely browned and clear juices come through when pierced. Take out and leave covered with foil for at least 10 minutes.




Chef's Tips

This is a great recipe that works for BBQ chicken as well as oven baked chicken. The chicken always comes out moist and juicy.

The key is to let the chicken marinade for at least 30 minutes. Light incisions will help the meat to marinade better.

If you don't have honey this works well with Maple syrup.

I usually serve this with thick cut chips and seasonal vegetables.

Bones can be used for a great stock after.
