    Place the slice of bread under a moderately pre-heated grill. Grill until golden on top then flip over and cover the bread in cheese. You can use Cheddar or Cheshire cheese. Grill until melted.

    You can also add some slices of tomato during the melting of the cheese.

Firstly the Welsh National Dish is more commonly considered to be Cawl. Secondly Caws Pobi (or rarebit, as the English call it) is a fair bit more than "enough cheese to cover the toast"

I think Welsh Rarebit's the welsh dish, you need to add mustard, beer, egg, seasoning, chives etc to the cheese making a wet mixture which you spread on the cheese. Beer from the night before works well enough and makes the dish really special, perfect afternoon hang-over cure! xXx
