Ingredients
- Sauce
- 8 tbs Soy Sauce
- 12 tbs cider
- 4 garlic cloves. crushed
- 1 tbs tomato puree
- 1 tbs brown sugar
- ยฝ tsp mustard powder
- 1 tsp cornflour
- Mix all the above ingredients in a jug to form a sauce
- 6 - 8 chicken breasts
- 1 onioin - chopped
- 6 - 8 mushrooms - chopped

The Baron de Ley winery was founded by a prestigious group of Rioja professionals in 1985. They were quite unique in their approach as they modelled the winery on a Medoc chateaux, which was a pioneering move at that time for producers in the Denominacion de Origen Calificada Rioja. This wine is aged in new oak casks for 20 months prior to resting in the bottle for 2 years before release. It has definite claret qualities; the nose is layered with ripe cherry, toasty oak and a touch of cigar box. Place the chicken, onion and mushrooms in a casserole.
Pour over the sauce.
Cook in a preheated oven at 180C for 20 to 30 minutes, until the chicken is cooked and tender.
