Ingredients
- 1 melon
- 1 pineapple
- a bunch of mint
- 1 tablespoon caster sugar
- 1 espresso cup size rum

Description
This is a lovely refreshing mix of pineapple and melon with a mint and rum dressing
Method

1. Cut the melon and pineapple into small cubes
2. Chop up the mint and put into a mortar bowl (any bowl will do really but I like pressing it with the pestle)
3. Add a tablespoon of caster sugar and a glug of rum (the rum is optional so the glug is just about as much as you want to - I slosh in a little bit
4. Pound the mint sugar and rum together.
5. Lay the fruit in a bowl or on a platter and then drizzle the mint mixture on top.
