    1. Preheat the oven to 190C.
    2. Put the new potatoes in a large saucepan and cover with water. Add salt to the water and bring to the boil. Turn down to simmer and cook for around 30 minutes or until cooked throughout. When cooked, drain off the water and leave on the side.
    3. Heat a frying pan and add a splash of oil. Season the pork fillets and place in the pan. Brown well on all sides then finish cooking in the oven for 8 to 10 minutes.
    4. While the fillets are cooking, place all the salsa verde ingredients in a blender, chop the herbs and capers by hand and mix in with the oil and lemon.
    5. To make the potato champ, crush the potatoes with your hands, add the spring onions, olive oil and lemon.
    6. To serve, pile up the potatoes on each plate, slice the pork and lie on top, and drizzle with salsa verde.
