Ingredients
- 150g unsalted butter
- 100g caster sugar
- 180g plain flour
- 55g rice flour
- ¼ teaspoon baking powder
- 1/8 teaspoon salt

1. Preheat oven to 170oC. Grease either shallow 20cm cake tin or 2 baking sheets.
2.Cream butter and sugar together with electric mixer until light and fluffy. Sift over flour, baking powder and salt. Mix well.
3. Either press into prepared tin or roll out to 1cm thickness and use cutter to cut pieces to place on baking sheets.
4. Prick all over with fork.
5. Bake until lightly golden, if in cake tin this will probably be 40-45mins, if shapes then 10-15mins.
6. Leave in tin or on sheet until cool enough to move.
7. If using cake tin, cut into wedges while still hot.
8. Store in an air-tight container.
