These are great because you can make some at the start of the week and then eat them for your lunches.

    Begin by chopping your vegetables (potatoe, sweet potatoe, swede, and onion) into small cubes, the smaller you cut them the more you can fit in. Mix them all in a bowl and add a handful of peas.

    slice your chicken into small cubes and coat it with peri-peri sauce, you could also use an alternative sauce which would change the whole taste of the pasty if you dont like peri-peri.

    sprinkle some flour on to the table and roll your pastry out on to it, try and get it quite thin, no more than about 4mm.

    Now cut your pastry into 4 same size circles and put a handful of vegetables on each and on top of that layer your saucy sliced chicken.

    Dab some water or even egg white around the outside of the pastry circles to help it stick and pull the pastry around your filling, to seal it pinch and twist slightly every 2cm until the pasty is closed.

    Put your pasties on a greased baking tray and pop them in a pre heated oven for 1 hour at 190&#730,C.

    when they are golden brown take them out and tuck in!

Chef's Tips

Use a pastry brush to brush on some melted butter just before you put them in so they go a really nice brown.

Also try using different sauces to completly alter the flavour of your pasties.
