Description

This is another recipe that I have created over the past two years ... I've taken bits and pieces from various bolagnaise recipes and added my own touch - Chorizo.

Method

    1. Put a large pan on a med heat. Add 1 tbsp of olive oil to the pan, once the oil is hot add the chorizo and dried herbs. Stir frequently for 2 minutes.
    2. Once you begin to smell the spices from the sausage add the chopped onion, carrot, celery and garlic. Fry until soft and starting to turn a golden colour.
    2. Add the mince to the pan and stir until the mince is browned,
    3. Add the 2 tins of chopped tomatoes along with 400 ml of water and the chopped up basil stalks. Stir in the tomoato puree.
    4. Bring to the boil and simmer for an hour
    5. Before serving mix in the parmesan cheese.
    6. Serve with fresh pasta and garlic bread.
