Ingredients
- 4 Sweetcorn cobs. halved
- 100 g Clover
- 1 Red chilli. finely chopped
- 1 Zest of lime
- 1 tbsp. Lime juice
- 1 tbsp. Chopped coriander
- to taste Salt and freshly ground black pepper
- 4 Free-range chicken drumsticks
- 4 Free-range chicken thighs

The Baron de Ley winery was founded by a prestigious group of Rioja professionals in 1985. They were quite unique in their approach as they modelled the winery on a Medoc chateaux, which was a pioneering move at that time for producers in the Denominacion de Origen Calificada Rioja. This wine is aged in new oak casks for 20 months prior to resting in the bottle for 2 years before release. It has definite claret qualities; the nose is layered with ripe cherry, toasty oak and a touch of cigar box. Lively, ripe, red fruit with dried tobacco and nutty vanilla overtones, round tannins with an expressive woody finish. Rioja wine can be excellent value for money and has terrific cellaring potential. 1. In a large saucepan, boil the halved sweetcorn for 8 minutes and drain. Pre-heat the oven to 200C, 180 fan, gas 6.
2. In a small saucepan, place the Clover, chilli, lime zest and juice and coriander. Heat gently to melt and keep warm.
3. Meanwhile, pre-heat a large griddle pan over a moderately high heat. Season the chicken all over and place onto the griddle, skin side down. Cook for 5-6 minutes on each side and transfer to an oven tray. Pop in the oven to finish cooking for a further 12 minutes whilst you griddle the corn. Place the corn on the griddle and cook for 10 minutes over a medium heat, turning until nicely scorched and charred.
4. When ready to serve, place the chicken and corn on a warmed platter and pour over the flavoured Clover and serve.
