This is best constructed using a large wok, safety goggles, gloves and an industrial strenght apron are highjy recommended!
Fry off the mince until slightly browned, drain off the fatty liquid. Put the mince aside.
Heat the wok with a small ammount of groundnut oil fry off the garlic and onions until soft. Add the mince and chillies.
In a mug mix together the vinegar, chilli powder, cocoa powder and suger. Mix them well together and then add to the wok.
Treat yourself to an ice cold lager.
Stir in the sweetcorn, tomatoes and kidney beans.
Treat yourself to another cold lager while you wash up, after all you deserve it after all this cooking.
Reduce the heat to very low and let the concoction cook through for as long as you like. About 3/4hr seems about right. It tastes even better if you let it cool overnight and then reheat it.
Serve with warm pitta bread and copious quantities of cold lager. A dash of sour cream will cool things off a bit. (not recommended!!!!)
Enjoy
