1. Fry off the onions and set aside.
2. Butterfly the chicken breast and spinkle with olive oil, oregano and garlic powder and cook at 180C for 50 mins.
3. Lay the spinach leaves on a large plate. Add the onions and chopped mushrooms to the salad.
4. Roughly tear the chicken and add to the salad with the red peppers and capers.

serve with mayonnaise mixed with steak seasoning
